CHIKA'S Plantain Chips with Guacamole:

2 large ripe avocados
½ small onion, finely diced
3-4 small cherry tomatoes, finely diced
½ teaspoon salt
Pinch of black pepper
½ - 1 small chilli, finely diced
1 lime, juiced

- Cut the avocados in half and remove the pits.
- Scoop the avocado flesh into a small bowl.
- Mash the avocado using a fork until smooth, or use a food processor for a creamier texture.
- Finely dice the onion, chilli, and cherry tomatoes.
- Add them to the mashed avocado.
- Squeeze the juice of the lime over the mixture, making sure to avoid the pits.
- Add the salt and a pinch of black pepper.
- Stir the ingredients together until thoroughly combined.
- Transfer the guacamole to an airtight container.
- Store it in the fridge until ready to serve.
