Ingredients
250 grams self-raising all-purpose flour
250 grams Greek style yogurt – room temperature
130 grams of sugar
3 large eggs – room temperature
90 grams virgin coconut oil – melted but not hot
1/3-½ teaspoon of nutmeg
40-60 grams of CHIKA'S Organic dried Pineapple, chopped into smaller pieces
1 teaspoon vanilla paste or 1 teaspoon pineapple extract and ½ teaspoon
vanilla paste
Method
1. Preheat the oven to 180 degrees Celsius.
2. Grease the loaf pan or use muffin tray lined with muffin cases.
3. Add sugar and eggs into a bowl. Mix them on low medium speed for 2-3
minutes until creamy and light in colour.
4. Add coconut oil, Greek yogurt and flavouring and mix for 10 second until
incorporated.
5. Add flour and mix for 5-10 seconds until fully incorporated.
6. Stir in chopped dried pineapple and pour into the tray.
7. Bake for 35-40 minutes if using a loaf pan or 25 minutes if making muffins.
This recipe makes one standard loaf or 12 muffins.
