Ingredients
1 cup of whole wheat penne pasta
1 cup of broccoli florets
1⁄2 cup of Greek feta cheese, cut into small cubes
1/3-1/2 cup of CHIKA'S Smoked Almonds
Handful of fresh basil leaves
Salt
Olive oil
Balsamic vinegar
Method:
- Cook the whole wheat penne pasta according to the instructions on the packaging. Drain and set aside to cool.
- In a pot of boiling water, blanch the broccoli florets for 1-2 minutes until they are bright green and slightly tender. Drain and rinse under cold water to stop the cooking process.
- Cube the Greek feta cheese into small pieces.
- In a large mixing bowl, combine the cooked pasta, blanched broccoli florets, cubed Greek feta cheese, smoked almonds, and torn basil leaves.
- Season the salad with salt, pepper, a drizzle of olive oil, and a splash of balsamic vinegar. Toss gently to coat all the ingredients evenly.
Serve immediately as a refreshing and nutritious salad option. Enjoy!
