Cheesy Chilli Scones

Give your scones a savoury twist with these deliciously soft and gooey, cheese and chilli scones.

Ingredients:

225g self-raising flour,

Pinch of salt

Pinch of cayenne pepper

1 tblsp dried parsley 

1 tsp baking powder

55g chilled butter, cubed 

120g mature cheddar, grated plus extra 

90-100ml milk, plus 1 tbsp for glazing

1 Pouch of CHIKA'S Chilli & Lime Nut Mix

Method:

Mix the flour, salt, cayenne, parsley and baking powder together.

Add the butter, using your fingers to rub together to get a sandy consistency.

Add your cheese and mix (saving some back to top them with before baking)

Add the milk and bring together. No need to knead the mix, needs to come together to roll.

Roll out the dough about 2cm thick and using a cookie cutter to cut circles.

Repeat until mix has been used up.

Place on a baking tray and brush with milk, top with cheese, parsley and chopped CHIKA'S Chilli & Lime nuts.

Bake in a preheated oven Gas mark 6 until cheese is golden and baked through.

Slice and top with butter whilst still warm and devour!
