Pesto Pasta

1 Avocado

1 cup basil (fresh leaves)

2 cloves garlic

2 tbsp lemon juice

3 tbsp smoked almonds

3 tbsp water

¼ cup parmesan cheese

3 tbsp water

5-8 cherry tomatoes

4 ounces spaghetti

1 tbsp olive oil




Into a blender, pulse all the ingredients together except water for 30 seconds. Add in water until it becomes completely smooth. Transfer it to a bowl and add cheese.

Boil 1l of water and add a pinch of salt and a teaspoon of olive oil. Cook as indicated on the packaging.

Strain spaghetti. Bring a large saucepan to medium-high heat. Add spaghetti in the saucepan and pour pesto and stir. Cut the cherry tomatoes in 2 before adding them to the saucepan. Stir the pastas and serve immediately. You can top them with more parmesan if you wish.
