OK, listen up. This is important. When we at CHIKA’S say we sell Hand-Cooked Plantain Crisps (Sprinkled With a Little Salt), that’s exactly what you get: flavoursome crisps with a sprinkle of salt, a dusting, a fine spray… not some senseless, heavy-handed showering of sodium chloride that has you gasping for a cool soda, water from a garden hose, ANYTHING!
The ‘plantain’ bit? Well, if you were from West Africa (like us), or a native of South America or the Caribbean, you’d know exactly what that is. But, if you don’t, that’s cool. Ain’t no shame in that.
Plantains are large bananas without the sweetness, but with plenty of starchy goodness ‘built-in’ – making them ideal to create yummy crisps out of. Really. After selecting plantains that are perfectly ripe, we then slice and shallow-fry them to a deep golden colour and wait until the tone is just right before even contemplating adding salt. After all, what’s the rush? Better to adopt the laid-back West African approach to these things. It works a treat for all our other lip-smacking snacks, doesn’t it?
“Crunchy”? You want “Crunchy”? OK, we’ll give you CRUNCHY. The lesson here being: be careful what you wish for. Why? Because some day that wish might just come true. In fact, it already has. Hand-Cooked Plantain Crisps (Sprinkled With a Little Salt) have redefined the meaning of ‘crunchy’. Forever!
